
Now, I'm not the hugest fan of mushroom; but being a vegan they're an excellent source of protein and other cool nutrients, that I'd be a little silly to pass up.
Ingredients:
Sliced button mushrooms
Garlic butter
Canola oil
Two or more types of sliced veges (I used cabbage and broccoli, because they were in my fridge. You could use just about any vege though :D)
Rice- i used 1 cup of brown rice; the flavour is delicious
Paprika
Cajun seasoning- or any seasoning of your choice
Soy Sauce
How-to
1. Cook your rice- your best bet is to follow the instructions on the rice packet; because it can vary. My rice took a lot longer than regular rice, because it's brown,
but it was defiantly worth the wait.
2. Cook your mushrooms in the garlic butter. I'm not a fan of mushrooms, the earthy taste is too strong for me, so I like to mask it with garlic, but if you're a fan of the taste, by all means cook it in plain butter or oil. I'm also not a fan of the slimy texture, so I like to cook them up until slightly crips and crunchy- a kind of meaty texture to add to your rice and veges. Let your mushrooms cool for a bit more crispness.
3. Once your rice is done, saute up some onion, and garlic. Add to that your sliced vegetables- cabbage is such an excellent fried rice ingredient (yum yum!)and cook them through. Frying is such the best way to keep all the nutrients in your veges, so as long as you use a good oil, this will be a delicious and healthy meal
4. Add the rice to your cooking vegetables. Then add your paprika and seasoning, and soy sauce to taste. Cook up until the vegetables are done to perection, and stir through your mushrooms in the last few minutes of cooking, so they have a chance to heat up.
5. Serve and enjoy!
