How to: Gourmet Roast potatoes

Easy, quick and tasty roast vegetables :D

You'll need:
3 Large potatoes
4 cloves of garlic
Fresh peas, still in the pod*
2 carrots*
walnuts*
Olive oil
Balsamic Vinegar
Seasonings- i used a tuscan one

Prep time- 5-10 minutes
Cooking- 20 mins

1. Turn your oven onto 220 degrees, on fanbake.Have your oven tray all ready for the vegetables to go into once they're prepared.



2. Start preparing your vegetables. Peel the garlic, slice the carrots, cut the stems from the peas, and cut the potatoes into even, small cubes. Make sure all your vegetables are approximately the same size



3. Put your vegetables into your oven tray, and drizzle over olive oil, and a dash of balsamic vinegar. I then added home-grown dried herbs- oregano, rosemary and a pinch of mint. Then sprinkle seasonings- salt,and tuscan, or seasonings of your choice. I also added a handful of walnuts, but this is personal taste.




4. Put your vegetables into your preheated oven, and cook for approximately 20 minutes. Don't forget to turn then over occasionally, making sure they don't burn. When you think they're ready, test the potato with a fork. If it's soft and not very resistant, it's done.




5. Serve. These potatoes serve 2 people as a main dish, or four people as a side dish. Enjoy!
